COD WITH FENNEL SEEDS

Ingredients:

  • 4 tomatoes
  • 4 potatoes
  • 1 vegetable broth cube
  • 1 tablespoon of fennel seeds
  • 700g cod fillets
  • Salt
  • Pepper

Preparation:

  1. First, wash the tomatoes, then plunge them into a pot of boiling water for about 30 seconds, then immediately immerse them in ice water. Now drain them, peel them, cut them in half, lightly crush them to remove the seeds, and finally roughly chop them, perhaps with a knife.
  2. Now peel the potatoes, wash them, and cut them into pieces. Then crumble the broth cube in 30 cl of warm water. Put the tomatoes and potatoes in a pan and add the broth and the fennel seeds. At this point, bring to a boil over medium heat, cover the pan, and cook for 20 minutes.
  3. Now cut the cod into cubes, season with salt and pepper. Then add the cod cubes to the pan, mix well, cover again, and cook for another five or six minutes, keeping the broth at a slight boil. I recommend serving the cod as soon as it is ready, very hot.

RICOTTA, ALMOND, AND FENNEL SEED CAKE

Ingredients for 6 people:

  • 200g organic sheep ricotta
  • 150g organic wholemeal flour or other of your choice
  • 120g potato starch
  • 75g organic sweet almonds, peeled, toasted, and roughly chopped
  • 3 eggs
  • 5 tablespoons organic honey
  • 5 tablespoons oil
  • 1 tablespoon of fennel seeds
  • Grated zest of an organic lemon
  • A pinch of salt
  • 1/2 packet of vanilla baking powder

To decorate, whole sweet almonds and fennel seeds.

Preparation

  1. Preheat the oven to 180°C (gas oven).
  2. Work the ricotta.
  3. In a bowl, beat the eggs with the honey, then add the ricotta, oil, a pinch of salt, and mix the ingredients well.
  4. Add the almonds, grated zest, fennel seeds, and mix with a wooden spoon.
  5. Finally, add the sifted flour, starch, and baking powder. Incorporate all the ingredients well, mixing again.
  6. Pour the mixture into a buttered and floured cake tin or lined with parchment paper, decorate with almonds, sprinkle with fennel seeds.
  7. Place the cake tin in the oven for 35 to 40 minutes, if you see that the top is not golden, turn off the heat and turn on the grill, and let it brown for a few minutes.
  8. Turn off the grill, let it rest, remove the cake from the oven.

Let it cool, cut into slices, and serve, it keeps well for up to 3 days in a dry place.
