Shui Xian is one of the most renowned rock teas or Yan-Cha.

It comes from the Wuyi mountains area, famous for giving birth to equally famous teas like Da Hong Pao and others. These plants sink their roots into the rock, which contributes to giving the infusions a taste with a mineral shade. The processing the leaves receive is very elaborate and expensive, thanks to the accuracy of these processes the tea takes on fantastic, delicate and floral characteristics at the same time. The name Shui Xian actually means Narcissus, and indeed its notes are very reminiscent of flowers like orchids and daffodils.
