It is indeed not easy to find information about Sichuan pepper, recipes and how to use it. Therefore, we have decided to share with you 3 simple recipes that enhance the unique aroma of this Chinese pepper and show you how to use it in the kitchen.

Recipe 1 - SALMON CARPACCIO WITH SICHUAN PEPPER

Ingredients for 2

  • Approximately 500 gr. of very fresh and lean salmon fillets (those with the skin underneath)
  • Lemon juice, extra virgin olive oil, salt
  • A tablespoon of Sichuan pepper or freshly ground black pepper
  • Fresh dill, well rinsed and dried

Preparation

For this recipe with Sichuan pepper, start by washing the salmon fillets very well under running water. Remove the central bone and any side bones. With a sharp knife, cut the salmon meat horizontally, in small cuts and several times, layer by layer, until you get as close as possible to the skin. Place the cut salmon pieces horizontally on a large flat plate.
Be careful, when cutting, not to take the white parts which are the fish fat.

Once the first layer is formed, drizzle it with plenty of lemon juice, a little oil, salt, Sichuan pepper, and chopped dill. Place the other pieces of salmon on the plate to form a second layer and proceed with the seasoning as before. I advise against making 3 layers. If you have leftover salmon, start again on another flat plate.
Cover tightly with plastic wrap and let the salmon 'cook' in the lemon, it will take about 20-30 minutes. Serve with plenty of fresh salad.

Recipe 2 - Sweet or Regular Potatoes with Pumpkin and Sichuan Pepper

Ingredients:

  • Steamed pumpkin
  • Steamed sweet potatoes or regular ones cooked in water
  • Plenty of onion
  • Nutmeg
  • Ghee or butter
  • Extra virgin olive oil
  • Salt or a seasoning of your choice
  • Sichuan pepper

Preparation

Put the chopped onions in a pan with ghee and oil and stew over low heat.
Add the pumpkin and sweet potato cubes, salt or seasoning, nutmeg, and Sichuan pepper.

Recipe 3 - Lemon and Sichuan Pepper Cake (vegan and gluten-free)

Ingredients:

  • 150gr. rice flour
  • 350gr. rice drink
  • 120gr. cane sugar
  • 50gr. vegetable oil or butter
  • 1 lemon
  • 1 packet of cream of tartar
  • 2.5 gr. Sichuan pepper

Preparation:

Boil the rice drink, then add the ground Sichuan pepper (it can also be done by hand) and heat for at least 15 minutes.
In a bowl, mix the flour, sugar, lemon juice, and grated lemon zest.
Melt the butter in a saucepan and then add it to the previously created mixture, stirring well.
Add the cream of tartar to the rice drink and stir with a wooden spoon until the cream of tartar is completely dissolved. Add it to the mixture and mix everything well until you get a thick cream.
Pour the mixture into bowls and bake the rice and lemon cakes in the oven for 15 minutes at 175°.
Great and decorative if you sprinkle cinnamon on the cakes!
