Green pepper corns are an excellent ingredient to enhance dishes of all kinds, especially to flavor meats and fish thanks to its particular but not overpowering taste. Green pepper corns are also an important ingredient in Creole cuisine, a spice mix composed of green pepper, black pepper, pink pepper, and allspice. To prepare it, simply toast the green peppercorns in a saucepan and then crush them, add the cognac and let the alcohol evaporate, add the broth and let it reduce, and finally add the cream until you get a velvety sauce. At this point, it can be salted. This sauce can be prepared using other alcoholic beverages instead of cognac, such as Marsala or brandy, and many also prepare it by eliminating the addition of cream for a lighter version.

Green Pepper in Brine

Green pepper is therefore harvested while still immature, green precisely, and the berries are placed in a saline solution, in brine. This process allows to block the enzymatic oxidation processes and maintain the green color. Green peppercorns, thanks to this process, also have a certain softness and their flavor is very aromatic and herbaceous, precisely because of the fruit's immaturity. The green color of the pepper may be due not only to the harvest time, but also to the processing, not only in the brine process but also in the drying process. During drying, green peppercorns are in fact treated with sulfur dioxide, which allows to maintain the bright green color.

Green pepper does not have particular contraindications, although it is necessary to pay attention to any plant intolerances. Often a gastrolesive effect is attributed to green pepper, so those suffering from gastrointestinal problems such as gastritis and reflux should limit its consumption.
