Galangal or galanga is a plant from the ginger family, originating from the Indian subcontinent. Used in both Ayurvedic and Arab medicine as a tonic, but also as a digestive. Like other plants in its family: ginger, turmeric, etc., it provides warmth in the stomach, promoting the digestive process. Its taste is very similar to ginger, but slightly more citrusy.
It can be used in any soup, stew, or emulsified with oil and then added to salads.
