- Very spicy chili pepper - Vegetable taste reminiscent of bell pepper - Suitable for many recipes
The Habanero Red Savina chili pepper, available at Terza Luna, is known in Guyana as the Dominican Devil’s Tongue Pepper or Ball of Fire Pepper. It is a cultivar of the Capsicum chinense species, with Cuban origins. This “cultivar” was discovered by Frank Garcia in 1989 in California while walking through a field of orange Habanero, another chili cultivar. Garcia noticed the difference in the fruits of this plant and named it after his mother “Savina.”
The Habanero Red Savina chili has a very spicy and intense flavor, with a peppery aftertaste, and was the hottest chili from 1994 until 2007, according to the Guinness World Records. It was later surpassed by the Bhut Jolokia, which measures 1,001,304 SHU (Scoville Heat Units), compared to the 577,000 of the Red Savina Habanero.
The Habanero Red Savina chili was long considered the hottest chili, entering the Guinness World Records in 1994 with a measurement of 577,000 SHU, until 2007, when it was surpassed by the Bhut Jolokia chili. However, the Guinness World Records measurement has never been reached again, and subsequent measurements have always reported a lower spiciness level for the Habanero Red Savina, around 250,000 SHU. It is often claimed that the spiciness of the Guinness World Records Habanero Red Savina was due to specific care given to that plant. There are indeed other chilies, like the Habanero Orange, that surpass the Red Savina in spiciness. The current spiciness record is held by the Carolina Reaper, a chili from the same family but created through genetic crosses.
The measurement in Scoville units refers to the presence of capsaicin in the fruit.
The Habanero Red Savina plant produces hanging fruits with a pointed shape. The Red Savina plant can reach 90 cm in height, while the fruits, bright red in color, are 5 to 7 cm long and require long maturation times. The cultivation of the Habanero Red Savina today is particularly common in Mexico, Texas, and California, where the cultivation of other Habanero varieties is also famous: Habanero Chocolate, Habanero Orange, and Habanero White. The Habanero Red Savina plant can also be grown in pots and kept on the balcony.
The Habanero Red Savina is well-known for its use in the production of pepper spray, but like all Habanero chilies, it is widely used in cooking and is particularly appreciated by connoisseurs. The Habanero Red Savina, available in the online shop of Terza Luna, is used to prepare jams or chili preserves, spicy sauces, paired with meats and hamburgers, or added to soups and stews. It adapts well to numerous dishes due to its vegetable taste reminiscent of pepper, but watch the quantities!
