Why Do We Talk About Precious Teas?

For a long time, it was believed that the different qualities of tea came from different plants. In reality, although there are small variations, these teas belong to the same botanical species, Camellia Sinensis. The diversity and variations in types of tea are the result of different cultivation methods, climatic conditions, soil, and of course, different processing methods. It is easy to distinguish black tea from green tea, as they differ in the oxidation process, but what makes a tea rare and precious? There are several reasons why a tea is considered rare, which then translates into availability and cost: the most precious and expensive teas can be difficult to cultivate (some are grown at altitudes of 1200-1300 meters in the mountains), produced in limited quantities, require careful hand-picking of tea leaves, undergo special processing methods, and take time to perfect. For example, Pu Erh teas require years of fermentation to reach perfection, making them very rare!

 

Rare and Precious Teas: The Importance of Terroir

Processing is certainly an important factor in determining tea quality, but a fundamental factor is the terroir, which plays a crucial role in developing the organoleptic notes and aromas of a precious tea; soil, altitude, climatic and weather conditions are all important influences in the development of tea leaves. There are teas where cultivation is carried out with careful processes that require labor and attention, such as the so-called kabuse teas, Japanese shaded teas, whose plants are covered with canopies to allow the development of important substances, making them particularly precious teas.

 

Fine White Teas

White tea is in itself a very precious and highly sought-after tea, produced from the collection of the youngest buds and the very first leaves with a silvery white color thanks to the downy fuzz that covers them. These rare teas undergo a completely natural fermentation, the leaves are allowed to wither in the sun and then dried. They are light, precious, delicate teas that absolutely must be savored in purity.
